Fluffy Pancakes with Blueberry Compote

Start your morning with a delightful plate of fluffy pancakes topped with a burst of fruity flavor from a homemade blueberry compote. This breakfast recipe is bound to become a family favorite.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 2 tablespoons white vinegar
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup water
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice

Instructions:

  1. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix together milk and vinegar. Let it sit for 5 minutes to sour.
  3. Add egg, melted butter, and vanilla extract to the soured milk mixture. Whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
  5. Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface of the pancakes, then flip and cook until golden brown on the other side.
  7. Meanwhile, in a saucepan, combine blueberries, water, sugar, and lemon juice. Cook over medium heat until the blueberries burst and the mixture thickens, about 5-7 minutes.
  8. Serve the pancakes hot with a generous spoonful of blueberry compote on top.
